Flavors in the Sky — From Concept to Plate Onboard

Flying with LOT is more than just traveling from point A to B. It’s an experience where every detail is carefully considered and tailored to the passenger. Kinga and Rajmund share how the onboard offerings are created, combining Polish hospitality, flavor, and travel comfort.

How did you come to work at LOT, and what are your roles?
Kinga: I’ve been working at LOT for over nine years, and in the aviation industry for eleven. In the Product Development and Customer Experience Office, I handle the selection of drinks and snacks included with the ticket. At the same time, I fly as a Chief Purser, which allows me to observe passengers’ reactions firsthand and combine onboard experience with designing the offering.
Rajmund: I’ve been with LOT for seventeen years—fifteen of those as a Chief Purser, and today I lead the catering section in the Product Development and Customer Experience Office. My operational experience helps me create offerings that are not only refined but also meet LOT’s quality standards.
What does your “corner of the world” look like within our company?
Kinga: I’m responsible for creating the selection of complimentary drinks and snacks available to our passengers. I make sure every detail—even something as small as a LOT-branded wafer—is carefully crafted and has a touch of our identity. I also handle the wine selection for the onboard menu.
Rajmund: I oversee the catering offering—from the initial concept to what actually reaches the cabin. The goal is for it to be tasty, convenient, and have a touch of Polish flavor. I draw on my experience as a former flight attendant, so I know what works in practice and how small details can shape a passenger’s memory of the flight.

Every airline has its own style—what makes LOT recognizable?
Kinga: I think it’s primarily our attention to detail and the fact that everything we do is genuine—not just for show. We want flying with us to be more than simple transportation, so we focus on the little things—like the selection of drinks on shorter flights or the variety in complimentary snacks and beverages. Those small touches really make a difference.
Rajmund: For me, it’s the consistency in what we do—we constantly strive to improve quality and surprise passengers with something special. A great example is the “Flavors with a Michelin Star in LOT Business Class” project. It demonstrates that exceptional cuisine can accompany travel at ten thousand meters. We combine top-level culinary experiences with Polish hospitality—and I think that’s what truly sets us apart.

What gives you the greatest satisfaction in your work?
Kinga: The greatest joy comes from seeing our ideas make it onboard and witnessing passengers’ reactions. Working as a flight attendant allows me to test the offerings in practice and gather direct feedback, which inspires further improvements.
Rajmund: For me, the most rewarding part is knowing that our work truly enhances the travel experience, allowing passengers to enjoy LOT in a unique way—with attention to every detail.

How have passenger expectations changed in recent years? What are they looking for in onboard service today?
Rajmund: We’ve seen a significant shift—passengers are increasingly knowledgeable and demanding, yet open to new experiences. They value variety and authenticity in the offerings, but personalization has become equally important.
More and more, passengers want to have a say in what they receive onboard—choosing meals that match their preferences or dietary needs, and deciding in advance what they would like. This shows that onboard service is no longer “one standard fits all,” but rather a flexible experience tailored to the individual needs of travelers.

Are there elements in LOT’s menu that highlight the airline’s Polish heritage?
Kinga: Yes, Polish accents are an important part of LOT’s identity. Traditional ingredients regularly appear on the menu, such as pierogi, gołąbki, seasonal goose dishes, and Polish wines. It’s our way of promoting Poland and showing that Polish cuisine has a lot to offer to the world.
On long-haul routes, diversity and flexibility are key—we combine Polish elements with international cuisines, while paying attention to the travel rhythm, comfort, and convenience of passengers. Everyone can find something familiar and discover something new.

On which flights are pre-paid meals available? Can economy class passengers also take advantage of them?
Rajmund: Yes, the pre-paid meal option is primarily aimed at LOT Economy Class passengers on European flights. It complements our standard complimentary offerings—such as LOT’s well-known seasonal pastries. This way, everyone can choose a meal that suits their preferences, making the journey even more enjoyable.
Passengers can tailor their meals to their tastes and dietary needs, which significantly enhances travel comfort. For us, it’s also a valuable source of information for planning the menu and expanding our offerings.
You can check the availability of pre-paid meals for your flight in the Manage Booking section.

Our sweet offering—a small cake available in two flavors, served with a glass of prosecco—is very popular. It’s a small gesture often ordered as a surprise for a travel companion—for an anniversary, birthday, or simply out of affection. We want every passenger to find something for themselves and be able to celebrate special moments even while traveling.
